In a non-aluminum frying pan, place 6 tablespoons of orange juice in a pan and heat.

Put sliced zucchini ( green and yellow) in the frying pan and cover.

Add sliced tomatoes and fresh ginger.

Optional: Sprinkle with turmeric and/or cinnamon. Also try adding a handful of parsley.

Cover and fry for 10 -15 minutes.
